How To Make Healthy Mix Vegetable Curry At Home

Mix Vegetables or Mix Veg. is an Indian delicacy originated in the Northern part of India, enjoyed by people all around the nation along with Poori (Fried Whole Wheat Flour Ball) or Roti (Indian Bread). It is a mix of variety of vegetables and simple spices that will surely delight you, and will also give you a punch of many vitamins and minerals. Mix Veg. is a great, healthy, mouthwatering and a very simple dish that people love to eat whenever they are ordering food from outside, or are in a restaurant. But do you know that it can easily be made at home without doing much work?

Here in this blog, I will be presenting you the recipe that you can use to make a very nutritious and extremely delicious Mix Vegetables at home.


RECIPE

1. The first step is to roast a few cashews in oil.

2. Put 2tsps of oil in pan and add chopped carrots and potatoes, and shallow fry it for a few minutes till they are light golden colour.

3. Now, add chopped capsicum, peas, french beans and cauliflower to the pan, and heat for a couple of minutes.

4. Fry the vegetables till they are cooked and keep it aside.

5. Now, heat a bit of oil in pan, and add cumin seeds to it and fry it for a few seconds.

6. Put chopped onions and tomatoes, and fry them until they turn mushy.

7. Now, add onion-tomato gravy and roasted cashews to the pan, and then add turmeric powder, red chilli powder, garam masala, salt and coriander powder to it.

8. Roast the gravy till it begins to leave oil on sides, and then add 2 tbsps cream or 1/2 cup milk to it.

9. Now, add a cup of water to it and bring it to a boil.

10. Add crushed dried fenugreek leaves and fried vegetables to the pan, and mix it well.

11. Cover the pan with a lid and let it cook for 3-4 minutes.

12. Done! Now you can enjoy it along with Roti or Rice.
