Carrots are tasty, sweet and delicious, and are enjoyed and loved by people during the winter season in form of carrot barfi, gajar halwa, carrot paratha, carrot tomato soup, gobi gajar shalgam achar, vegan carrot pudding, veg chops, mix veg, veg kolhapuri, carrot cake and many other delicious and tasty snacks and food items. Around 94% of the American carrot is grown in Texas, Washington, Florida and California. They are also a great source of potassium, carotene, fibre, vitamin K1, and many antioxidants. What’s more is that they have numerous health benefits, like it improves eye health, helps in weight loss, and lowers cholesterol levels in the body. And the carotene found in it also reduces the risk of cancer. Carrots are found in many colours like orange, white, yellow, purple and red.

Carrots contain Pectin, which is a form of soluble fibre that can lower down the blood sugar levels by slowing the digestion of starch and sugar.
