Although India and Indian cuisine is mostly known for its delicious street food, but it not just stops there. India is a world of spices, flavours and colours, where people are united not just because of the festivals, but also because of the food. And one of the key players that is not just an important part of the Indian cuisine, but also contributes in uniting people is Tomato which is used in almost all the Indian foods to make it more nutritious and delicious.

NO 1 Tomato Pulao
Tomato Pulao is highly nutritious, delicious and tasty. It can easily be made using rice, a few vegetables, tomatoes, herbs and spices. You can follow the recipe mentioned below to make this delicious dish:

1. Rinse a cup of rice well in water and then soak it in water for 25-30 minutes.

2. After around 30 minutes you can drain out the water and keep the rice aside.

3. Crush 1/2 ginger, 3 garlic cloves and 1-2 green chillies to make a semi fine paste.

4. In a pressure cooker, heat two tablespoons of oil or ghee, and then after a few seconds put 2 cloves, 1 inch cinnamon, 1 star anise, 1 tejpatta (Indian bay leaf), 1teaspoon cumin seeds and 2 green cardamoms. You can also put 1teaspoon fennel seeds and 7-8 curry leaves while frying the whole garam masala. 

5. Now, add 1/3 chopped onions to it.

6. Stir and saute the onions often till it becomes light golden on medium flame.

7. Now, add the ginger+green chilli+garlic paste with 1teaspoon of chopped mint leaves and 2teaspoons of chopped coriander leaves.

8. Saute and stir for a few seconds or until the aroma of garlic and ginger goes away.

9. Now, add 3/4 cup chopped tomatoes, and stir it often until the tomatoes become soft and pulpy.

10. Add 1/4 tablespoon turmeric powder, 1/4 teaspoon black pepper and 1/2 teaspoon red chilli powder, and mix it well.

11. Add 3/4 chopped mix vegetables like peas, french beans, potatoes, carrots etc. And stir and saute for 2-3 minutes.

12. Now, add the rice, and saute and stir for about a minute.

13. Pour 2 cups of water, and put salt in it.

14. Stir and mix well, and pressure cook it on medium flame for 10-12 minutes.

15. Done! Now you can take out the delicious and tasty homemade Tomato Pulao.



NO 2 Tomato Dal
Tomato Dal is tasty, delicious and tangy, and can be made at home easily using pigeon pea lentils, onions, tomatoes, spices and herbs. You can follow the recipe mentioned below to make this mouthwatering dish:

1. Rinse 1/2 cup tuvar dal (arhar dal or pigeon pea lentils) in water, and then soak it in water for 15-20 minutes.

2. Drain out the water and keep the dal aside.

3. Now, chop tomatoes, green chilli and onion, and keep all the ingredients ready.

4. Heat 2tablespoons of ghee or oil in a pressure cooker at low flame.

5. Now, add 1/2 teaspoon mustard seeds, and let it crackle a bit.

6. Add 1/2 teaspoon cumin seeds and let them splutter a bit on low flame.

7. Now, add 1/2 cup chopped onions, 9-10 curry leaves and 1 green chilli.

8. Saute and stir the onions until they become translucent on medium flame.

9. Now, add 1teaspoon ginger-garlic paste to it, and saute it for a few seconds.

10. Add 2 medium sized chopped tomatoes to it, and mix it well.

11. Now, add 1pinch hing (asafoetida), salt, 1/4 teaspoon red chilli powder, 1/4 teaspoon turmeric powder, and saute and stir it for 2 minutes on medium flame.

12. Add the soaked tuvar dal and 2 cups water to it, and mix it well.

13. Pressure cook it on high flame for 6-8 whistles.

14. Remove the lid after the pressure settles down, mash the dal lightly, and then garnish it with some coriander leaves.

15. Done! Now you can enjoy the Tomato dal along with some rice.
